Our Story

Boxcar Bakery co-owners MK and Stacey met in 1998 when Stacey was dating MK’s brother. At the time, MK was in North Carolina going to college before moving to Denver but eventually moved back home to her home state Vermont. Now sisters-in-laws, they became best-friends and colleagues, working together at various establishments and both working their way up to General Managers at different Farmhouse Group restaurants (MK at Guild Tavern and Stacey at Pascolo Ristorante).

Boxcar Bakery started in 2010 in Stacey’s home kitchen in Essex Junction, selling her goodies to the inaugural Five Corner’s Farmers’ Market. She had a vision of opening a neighborhood bakery in Essex Junction at the time, and after doing several seasons at the farmers market and selling her pastries to Sweet Clover Market and Healthy Living, she decided the timing just wasn’t right to move forward with the bakery. She had two little ones that were in preschool and elementary school at the time, so the vision was put on hold…

As the years passed, the itch for baking never left for Stacey. She found a position in the back of the house at Sweet Simone’s in Richmond where in time she took on the role of the “laminator,” as well as the kitchen manager. COVID came, MK had been at Guild Tavern for 8 years and decided it was time for a change. Sweet Simone’s needed a barista and MK joined the team to fill that role, eventually taking on the role of Front of the House Manager. As time went on, MK and Stacey, working together once again realized their potential together as a team. Priding themselves on their customer service and managerial skills that they had developed throughout the years, they realized they needed to move on and open their own place. Let’s be honest, they weren’t getting any younger, so now was the time!

Stacey’s vision of opening a neighborhood bakery in Essex Junction was still in the back of her mind. While Essex Junction had grown with some new local favorites in recent years (Nest and Nomad), it still felt as though the growing city needed another place to gather; a place that you could walk in and pick up a cake that day for a celebration; a place to bring your mom for tea and a scone; a place to read your book over coffee and a chocolate croissant; a place for the kids to come after school for a warm chocolate chip cookie; a place to get a healthy bite on the way to work; a place to get 3 dozen goodies to take to the bake sale at the band concert that night. 

MK and Stacey found the space at 11 Park Street. Right in the middle of the bustling 5 Corners with its bright windows and natural morning light. It seemed like the right place for them to move forward with their business together. So here we are on the cusp of opening our neighborhood bakery for you to enjoy. We can’t wait to get going, baking and making delicious coffee, coffee-adjacent, and non-coffee drinks for you. We love hosting, we love that we are two Vermont women opening a business in our home state and can’t wait to get to know new faces and seeing familiar ones – particularly those who have been supportive recently and also way back in 2010 when Boxcar Bakery first started.
